I like to embrace the changing of seasons with foods that work with whats growing in the garden. In the change from spring to summer, we have onions, garlic and chives ready for harvest. I find it therapeutic to spend 5 minutes walking through the garden and choosing what we can put on our plates. Try this Smoked Bacon Pasta for an easy but delicious meal

I was gifted a Swedish recipe book for my birthday after visiting the country. My love for Swedish food has only deepened from there. The recipe has relatively simple ingredients which I am likely to have on hand in the fridge or pantry.
Instructions
- Add the mug of pasta water to the bacon sauce and stir on low heat. Toss the pasta in the sauce until well coated and thickened. Serve immediately and sprinkle over the fresh chives
- Bring a large pan of salted water to the boil for the tagliatelle or pasta.
- Fry the butter, onion and bacon in a large pan, stirring occasionally until the sausage and onion are golden.
- Add the tomato purée, mustard, paprika and cream. Continue to stir and simmer on low heat for 5 minutes. Taste and add seasoning to your taste.
- Add the pasta to the pan of boiling water and cook until al dente. Once cooked, drain the pasta but reserve a small cup of the pasta water (around 90ml)
Smoked Bacon Pasta (One Pot Recipe)
A Swedish comfort-food classic, but one you're unlikely to see served outside of the home. This dish is often served with rice, but I enjoy mine with pasta.
Ingredients
- 1 tbsp Butter
- 2 cloves Garlic
- 1 Large Onion
- 300 g Bacon or Smoked Sausage
- 1 tbsp Tomato purée
- 1 tbsp Dijon mustard
- 1 tsp Paprika
- 130 ml Single or Double cream
- Sea Salt & Black Pepper
- 500 g Tagliatelle or your favourite pasta
- Handful of finely chopped chives
