Summer Pasta Salad

I am confident that this summer pasta salad will be on your favourites. Full of fresh vegetables, tender pasta and burst of flavour in every bite. This is an easy pasta salad and it’s packed with summer vegetables which you may be growing yourself. I am one of those people who can eat pasta everyday, so recipes which I can batch cook and enjoy for my lunch are always a win!

Why a pasta salad

Serves a whole family: This recipe makes a BIG bowl of lunch. It stores well in the fridge for at least a few days, making it perfect for lunch, dinner, or as a healthy side dish. It is always a popular addition to any summer gathering too.

This recipe is very versatile: Use ingredients you love or have in the pantry.

Ingredients  

  • 500 g Pasta
  • 1 tin Tuna
  • ½ cup Mayonnaise
  • ½ Red Pepper
  • ½ Red Onion
  • ¼ Cucumber
  • Handful of chives/Spring onions

Instructions 

  • Start by boiling your pasta. Season the pasta water with salt or a vegetable stock. Once cooked to al dente, drain and run under cold water until the pasta is completely cooled
  • Finely chop your pepper, onion, cucumber, chives and spring onions. Add to a large bowl with your cold pasta
  • Add your mayonnaise and season to taste once all the ingredients have been mixed together
  • Stored in an airtight container in the fridge and serve within 4 days!

‘Al dente’

What does cooked to al dente mean?

The term is Italian and means “to the tooth.” It describes how pasta should feel when you bite into it. The pasta should be tender but slightly firm and chewy.
