Start by boiling your pasta. Season the pasta water with salt or a vegetable stock. Once cooked to al dente, drain and run under cold water until the pasta is completely cooled
Finely chop your pepper, onion, cucumber, chives and spring onions. Add to a large bowl with your cold pasta
Add your mayonnaise and season to taste once all the ingredients have been mixed together
Stored in an airtight container in the fridge and serve within 4 days!
