Granola Bars

Homemade Granola: Coconut & Dark Chocolate {with video)

As a no-bake recipe, these homemade granola bars are a quick and delicious!

Ingredients

  • 1 cup Peanut butter
  • ⅔ cup Honey (soft or runny)
  • 1 tsp Vanilla Extract
  • 2 cups Large Rolled Oats
  • ⅓ cup Dark Chocolate Chips
  • ⅓ cup Shaved Coconut (plus more for topping)
  • Pinch of salt

Flavour Variations

The main ingredients with must be added to this recipe is:

  • Oats
  • Peanut butter
  • Honey
  • Vanilla Extract
  • Salt

Change the flavour

Instead of the Dark chocolate chips and Coconut shavings that I added, try these:

  • Dried fruits for example cherries
  • White Chocolate Chips
  • Milk Chocolate Chips
  • Chopped Nuts (pecans, walnuts, almonds)
  • Raisins

The list is endless!

Instructions 

  • In a large bowl, add all of the ingredients, and mix until full incorporated
  • Line an 8×8 baking pan with baking paper.
  • Add the mixture to your non stick pan, and cover with another sheet of baking paper. Press firmly into the dish using a cup or flat surface. Sprinkle more coconut shavings and a small handful of chocolate chips, and press into shape.
  • Chill in the fridge for at least 1 hour before cutting. Enjoy on their own, with crumble, on top of yoghurt, and more!

  • cup Dark Chocolate Chips
  • cup Shaved Coconut (plus a sprinkle for topping)
