Ingredients
- 1 Onion (chopped)
- 3 Garlic Cloves (diced)
- 1 tbsp Sunflower Oil for frying
- 5-10 Bacon Rashers
- 400 g Tinned Tomatoes
- 200 ml Vegetable Stock
- 1 tbsp Tomato Puree
- 100 ml Double Cream
- 1 tbsp Mustard
- Hand full Fresh Parsley
- Salt and Pepper to season
- Fresh Basil to top
Instructions
- Bring a large pan of salted or stock water to the boil for the tagliatelle or pasta. Cook until al dente.
- In you pan add the oil, onion and garlic, stirring occasionally. Add your bacon, and stir until cooked.
- Add the tinned tomatoes, puree, salt, pepper and paprika. Continue to stir and simmer on low heat for 5 minutes. Taste and add seasoning to your taste.
- Once cooked, drain the pasta but reserve roughly 1 cup of the pasta water.
- Add the mug of pasta water to the bacon sauce and stir on low heat. Toss the pasta in the sauce until well coated and thickened.
- Add your pasta to your cookware dish and drizzle over your double cream and 1 tbsp Mustard. Lightly mix and top with shredded cheese.
- Grill for 2-3 minutes until the cheese has melted to your preference!
