Preheat the oven to 230C/fan 210C/gas mark 8. Drizzle a tbsp sunflower oil evenly into 8 muffin cups and place in the oven until piping hot
To make the batter, add 1 cup plain flour, 200ml milk and 4 eggs into a bowl and beat until smooth. You can season with salt and pepper as an optional extra
Pour the batter into a jug, then remove the hot tins from the oven. Carefully and evenly pour the batter into the muffin cups. Place the tins back in the oven and leave the oven door closed for 20-25 mins until the puddings have puffed up and browned.
Serve immediately or cool and freeze for up to 1 month!
