Slice the pork skin every inch, just through the skin and into the fat, don't cut too deep. Preheat the oven to Gas mark 8
Pat dry the skin with a paper towel and season with salt. Add 2 cups water to your roasting tin. Place the pork into the oven Gas Mark 8 for 30 minutes. After 30 minutes, turn the oven down to Gas mark 6 and continue to cook until you reach an internal temp of 65℃.
Once cooked, allow the pork rest for at least 15 minutes before carving.
